  • 3 pieces Eggs Large eggs
  • 2 tsp Baking powder For leavening
  • 90 g Flour All-purpose flour or gluten-free blend
  • 1 tsp Vanilla extract For flavor
  • 1 tbsp Oil For frying
Toppings and Sweeteners
  • Sweetener of choice (e.g., maple syrup, sweetener, honey) To taste

Method
 

Preparation
  1. In a large bowl, mix together the Magerquark, eggs, baking powder, flour, vanilla extract, and your choice of sweetener until smooth.
Cooking
  1. Heat oil in a non-stick frying pan over medium heat.
  2. Use an ice cream scoop to drop round portions of the mixture into the pan.
  3. Cook for about 3-4 minutes on each side until they are golden brown.
Serving
  1. Serve warm, dusted with powdered sugar and topped with your choice of berries.

These coins can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to a month. Reheat gently before serving.
