  • 1 cup cottage cheese Can substitute with silken tofu or Greek yogurt.
  • 1 cup rolled oats
  • 1/2 cup blueberries (fresh or frozen) Can swap for raspberries or strawberries.
  • 2 tablespoons lemon juice
  • 1 zest of 1 lemon Boosts flavor.
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon baking powder Omit for a denser bake.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 units eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the cottage cheese, oats, blueberries, lemon juice, lemon zest, honey (or maple syrup), baking powder, vanilla extract, salt, and eggs. Mix well until all ingredients are combined.
  3. Pour the mixture into the prepared baking dish.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the top is golden and set.
  2. Allow to cool slightly before slicing. Serve warm or store in the fridge for meal prep.

Notes

Drizzle some honey or a dollop of Greek yogurt on top for an extra creamy touch. This bake holds up well in the refrigerator for 4-5 days or can be frozen for later.
