Ingredients
  

Vegetables
  • 2 medium sweet potatoes, peeled and diced
  • 2 medium russet or Yukon gold potatoes, peeled and diced
  • 2 stalks celery, diced
  • 2 carrots carrots, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
Beans and Seasonings
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until the onion is translucent.
  2. Add carrots, celery, and potatoes; cook for about 5 minutes, stirring occasionally.
Cooking
  1. Stir in sweet potatoes, white beans, vegetable broth, cumin, smoked paprika, salt, and pepper.
  2. Bring to a boil, then reduce heat to low. Cover and let simmer for 25-30 minutes, or until the potatoes are tender.
  3. Adjust seasoning as needed.
Serving
  1. Serve hot, garnished with fresh parsley if desired.

Notes

Chop all your vegetables evenly for even cooking. Taste and adjust seasoning before serving, adding more salt, pepper, or spices if needed. For a thicker stew, mash a few sweet potatoes with a fork before serving. Leftovers can be stored in an airtight container for up to 4 days. Freeze for longer storage.
