  • 1 can chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. In a large pot, heat a drizzle of oil over medium heat.
  2. Add the onion, garlic, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the chickpeas, diced tomatoes, vegetable broth, oregano, and thyme.
  4. Bring to a simmer and cook for about 20-25 minutes.
  5. Season with salt, pepper, and lemon juice. Adjust seasoning to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

The soup keeps well in the refrigerator for about 3-4 days. It can last up to 3 months in the freezer. For a creamier texture, blend a portion of the soup. Add red pepper flakes for extra spice.
