Ingredients
  

Truffle Base
  • 1 cup medjool dates, pitted
  • 1 cup raw almonds or walnuts Either nuts can be used.
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup coconut oil, melted Use melted for easier blending.
  • 1 teaspoon vanilla extract
  • pinch salt

Method
 

Preparation
  1. In a food processor, combine the dates, nuts, cocoa powder, melted coconut oil, vanilla extract, and a pinch of salt.
  2. Process until the mixture is well blended and sticky.
  3. Scoop out small portions of the mixture and roll them into balls.
  4. Place the truffles in the fridge for about 30 minutes to set.
  5. Enjoy your delicious vegan chocolate truffles!

Notes

Store truffles in the fridge for up to two weeks or freeze for a month. For a variation, try adding peppermint oil, nut butter, or dried fruits.
