Preparation
- Preheat your oven to 375°F (190°C) if baking.
- In a mixing bowl, mash the chickpeas until they’re chunky.
- Add breadcrumbs, chopped onion, minced garlic, nutritional yeast, cumin, paprika, salt, and pepper. Mix until combined.
- For binding, mix flaxseed meal with water and let it sit for a few minutes, then add to the mixture.
- Form the mixture into small nugget shapes.
Cooking
- To bake, place on a lined baking sheet and spray with oil. Bake for about 25-30 minutes, flipping halfway through.
- For frying, heat oil in a pan and cook nuggets until golden brown on both sides.
Serving
- Serve warm with your favorite dipping sauce.
Notes
Adjust spices to your taste. You can use black beans instead of chickpeas for a different flavor. Store leftovers in the fridge for 3-4 days, or freeze for up to 3 months.
