Preparation
- If using fresh corn, grill it until charred, then cut the kernels off the cob. If using frozen, cook according to package instructions.
- In a large bowl, combine the corn, Greek yogurt, red bell pepper, cilantro, red onion, lime juice, chili powder, and season with salt and pepper.
- Mix well until all ingredients are combined.
- Chill in the fridge for at least 30 minutes before serving for the flavors to meld.
