Ingredients
  

Main Ingredients
  • 4 cups corn (fresh, frozen, or canned) If using fresh corn, grill until charred and cut kernels off the cob.
  • 1 cup Greek yogurt Substitute with a vegan alternative if needed.
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup red onion, diced
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder

Method
 

Preparation
  1. If using fresh corn, grill it until charred, then cut the kernels off the cob. If using frozen, cook according to package instructions.
  2. In a large bowl, combine the corn, Greek yogurt, red bell pepper, cilantro, red onion, lime juice, chili powder, and season with salt and pepper.
  3. Mix well until all ingredients are combined.
  4. Chill in the fridge for at least 30 minutes before serving for the flavors to meld.
Serving
  1. Serve as a side dish at BBQs or enjoy as a light meal.

Notes

Feel free to mix in other veggies like avocado or cucumber for extra crunch! For a little kick, add diced jalapeƱos or a splash of hot sauce. Store in an airtight container in the fridge for up to 3 days.
