Ingredients
  

For the Chicken
  • 2 large chicken breasts, cut into bite-size cubes About 1.5 lbs total
  • 1.5 cups corn kernels, fresh, frozen, or canned, drained
  • 2 tbsp olive oil or avocado oil For cooking
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp garlic powder
  • to taste salt and pepper For seasoning
  • 1 lime, juiced
  • 0.25 cup red onion, thinly sliced
  • 2 tbsp chopped cilantro
For the Sauce
  • 0.5 cup plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 clove garlic, minced
  • 0.5 lime, juice and zest
  • 1 tbsp finely chopped cilantro
For Serving
  • 2 cups cooked rice (white, jasmine, or brown) For the base

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium-high heat.
Cook Chicken
  1. Add chicken cubes with smoked paprika, chili powder, garlic powder, salt, and pepper. Sauté until the chicken is cooked through and golden brown, about 7-10 minutes.
Combine Corn
  1. Stir in the corn kernels and cook for another 2-3 minutes.
Prepare Sauce
  1. In a bowl, mix the Greek yogurt, mayonnaise, minced garlic, lime juice, lime zest, and chopped cilantro. Give it a good stir!
Final Assembly
  1. On a bed of cooked rice, layer the chicken and corn mix. Top it off with the sauce, red onion, and extra cilantro.

Notes

Use leftover rice to save time. For a vegan option, substitute chicken with chickpeas or tofu and use cashew cream instead of yogurt.
