  • 1 lb chicken breast, diced
  • 1/2 cup soy sauce Low-sodium soy sauce can be used.
  • 1/4 cup honey Can be reduced or substituted for a sugar substitute.
  • 2 cloves garlic, minced Toasting adds depth of flavor.
  • 1 inch ginger, grated
  • 1 tablespoon sesame oil
  • 2 cups cooked rice or quinoa
  • Chopped green onions and sesame seeds for garnish

Method
 

Preparation
  1. In a bowl, mix together soy sauce, honey, garlic, ginger, and sesame oil.
  2. In a skillet over medium heat, add the diced chicken and cook until browned and cooked through.
  3. Pour the sauce over the chicken and simmer for about 5-7 minutes, until sauce thickens.
  4. Serve the sticky chicken over rice or quinoa and garnish with chopped green onions and sesame seeds.

Notes

This dish is great for meal prep! Store any leftovers in the fridge for up to 3 days or freeze in an airtight container. When ready to eat, reheat on the stove or in the microwave.
