Ingredients
  

For the Cookie Dough
  • 1.5 cups almond flour
  • 0.25 cup cashew butter or peanut butter You can swap cashew butter for any nut butter of your choice.
  • 0.25 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.25 cup chocolate chips These can be mixed into the cookie dough.
For the Topping
  • 1 cup chocolate chips For melting and spreading on top.
  • 1 tsp coconut oil To help melt the chocolate smoother.
  • Flaky sea salt Optional, for sprinkling on top.

Method
 

Preparation
  1. In a bowl, add almond flour, cashew butter, maple syrup, melted coconut oil, vanilla, and salt. Mix together until everything is evenly combined.
  2. Stir in the chocolate chips.
  3. Place parchment paper on a cutting board or large plate. Transfer the cookie dough mixture onto the parchment paper. Using a silicone spatula or your hands, firmly press the dough to flatten it to about 1/2-inch thick. Set aside.
Topping
  1. In a small bowl, combine the remaining chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until the chocolate is fully melted.
  2. Pour and spread the melted chocolate over the cookie dough layer. Sprinkle flaky sea salt on top if desired.
Chilling
  1. Chill the cookie dough bark in the freezer for 10 minutes to set.
  2. After chilling, chop into large chunks. Enjoy your Healthy Cookie Dough Bark!

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week. For longer storage, freeze it for up to a month, wrapped tightly to avoid freezer burn. Make sure to evenly mix the ingredients for the best flavor and texture.
