Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add oats, chocolate chips, almond flour, maple syrup, vanilla extract, baking soda, cinnamon, and salt. Mix until well combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
Baking
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool before serving.
Notes
Store cookies in an airtight container for up to 3 days or in the fridge for up to a week. Freeze for up to 3 months and reheat in the microwave for 10-15 seconds before serving.
