  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add oats, chocolate chips, almond flour, maple syrup, vanilla extract, baking soda, cinnamon, and salt. Mix until well combined.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes or until the edges are golden brown.
  2. Allow to cool before serving.

Notes

Store cookies in an airtight container for up to 3 days or in the fridge for up to a week. Freeze for up to 3 months and reheat in the microwave for 10-15 seconds before serving.
