Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the applesauce, brown sugar, vanilla, and lemon juice.
- In another bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
- Gradually stir the dry ingredients into the wet mixture until well combined.
- Pour the batter into a greased or lined baking pan.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool before serving.
Notes
Serve warm topped with cinnamon, a dollop of Greek yogurt, or honey. Keeps well for 4-5 days in the fridge, and can be frozen for up to 3 months.
