Wet Ingredients
  • 2 cups unsweetened applesauce
  • 1/2 cup brown sugar Adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
Dry Ingredients
  • 1 cup whole wheat flour Can substitute with all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the applesauce, brown sugar, vanilla, and lemon juice.
  3. In another bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, cinnamon, and salt.
  4. Gradually stir the dry ingredients into the wet mixture until well combined.
  5. Pour the batter into a greased or lined baking pan.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool before serving.

Notes

Serve warm topped with cinnamon, a dollop of Greek yogurt, or honey. Keeps well for 4-5 days in the fridge, and can be frozen for up to 3 months.
