  • 4 Hash brown patties Pre-packaged or homemade
  • 1 Avocado Ripe for best consistency
  • 1 Cup of roasted brussels sprouts
  • 1 Cup of broccoli Roasted until tender
Seasonings & Toppings
  • 1 tsp Everything bagel seasoning For seasoning
  • 1/4 cup Vegan parmesan cheese Optional topping
  • 1 handful Fresh microgreens For garnish

Method
 

Preparation
  1. Cook the hash brown patties according to package instructions.
  2. While the hash browns are cooking, roast the brussels sprouts and broccoli until tender.
  3. Mash the avocado in a bowl and season to taste.
Assembly
  1. Once the hash browns are ready, top each patty with mashed avocado, roasted brussels sprouts, and broccoli.
  2. Sprinkle everything bagel seasoning and vegan parmesan cheese over the top.
  3. Garnish with fresh microgreens before serving.

Notes

For best results, prepare the vegetables in advance. Store leftovers in the fridge for 2-3 days, but enjoy fresh assembly for optimal taste.
