Ingredients
  

For the Hash Brown Avocado Toast
  • 2 pieces Hash brown patties Cook according to package instructions.
  • 1 large Avocado Mash and season to taste.
  • 1 cup Roasted brussels sprouts Roast until tender.
  • 1 cup Broccoli Roast until tender.
  • 1 tablespoon Everything bagel seasoning Sprinkle on top for flavor.
  • 2 tablespoons Vegan parmesan cheese Can substitute with regular parmesan if desired.
  • 1 cup Fresh microgreens Garnish before serving.

Method
 

Preparation
  1. Prepare the hash brown patties according to package instructions.
  2. While the hash browns are cooking, roast the brussels sprouts and broccoli until tender.
  3. Mash the avocado and season it to taste.
Assembly
  1. Once the hash browns are cooked, top each patty with a generous amount of mashed avocado, roasted brussels sprouts, and broccoli.
  2. Sprinkle everything bagel seasoning and vegan parmesan cheese on top.
  3. Garnish with fresh microgreens before serving.

Notes

For extra crispy hash browns, cook them in a little oil. Add lemon or lime juice to the avocado to enhance its flavor. Feel free to mix in other beloved vegetables like cherry tomatoes or spinach. You can also add a poached or fried egg on top for extra protein, or include spicy sriracha for added heat.
