  • 4 medium zucchinis Halved and scooped out
  • 1 pound ground beef Can be swapped with ground turkey or chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced Toast for better flavor
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce
  • 1 cup shredded cheese (e.g., mozzarella or cheddar) Mix and match for different flavors

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
Cooking
  1. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onions are translucent.
  2. Stir in the Italian seasoning, salt, and pepper.
  3. Add the marinara sauce and mix well.
  4. Fill the zucchini halves with the beef mixture and top with shredded cheese.
  5. Place the zucchini boats in a baking dish and cover with foil.
  6. Bake for 20-25 minutes, then remove the foil and bake for an additional 5-10 minutes or until the cheese is bubbly and golden.
Serving
  1. Serve warm, optionally alongside a fresh garden salad or garlic bread.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. You can assemble the boats ahead of time and refrigerate before baking.
