Ingredients
  

For the Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 pieces lemons, juiced
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Assembly
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 serving tzatziki sauce (store-bought or homemade)

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade, ensuring they soak up all that goodness. Marinate for at least 15 minutes.
Cooking
  1. Heat a skillet over medium-high heat. Add the marinated chicken, cooking for about 6-7 minutes per side, until fully cooked.
  2. Remove chicken from the skillet and let it rest for a few minutes, then slice it.
Assembly
  1. In bowls, layer the cooked quinoa or rice, followed by sliced chicken, cherry tomatoes, cucumber, red onion, feta, and a sprinkle of parsley.
  2. Drizzle with tzatziki sauce and serve!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze individual portions for up to 3 months. Reheat in the microwave.
