Preparation
- Boil the Potatoes: Place potatoes in a pot, cover with water, and add salt. Boil until tender.
- Smash 'Em: Drain and place on a baking sheet. Use a fork or potato masher to gently smash each potato.
- Prepare the Garlic Butter: In a small saucepan, melt butter with olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Coat the Potatoes: Brush garlic butter over each smashed potato. Sprinkle with Parmesan, salt, and pepper.
- Bake: Pop the sheet in the oven at 425°F (220°C) for about 20-25 minutes until crispy.
- Garnish and Serve: Once golden brown, remove from the oven and sprinkle with fresh parsley.
Notes
Store leftovers in an airtight container in the fridge for about 3-4 days. For a quick reheat, pop them back in the oven at 350°F (175°C) until warm and crispy again. You can freeze them, but they taste best freshly made. Use a sturdy potato like Baby Golds or Yukons, and feel free to customize your seasonings.
