- Preheat your oven to 425°F (220°C).
- In a large bowl, combine zucchini rounds, olive oil, garlic, Italian seasoning, salt, and black pepper. Toss until everything is well-coated.
- Spread the zucchini evenly on a baking sheet lined with parchment paper.
- Sprinkle the Parmesan cheese over the top.
Cooking
- Roast in the oven for about 20-25 minutes until golden and crispy.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
For a twist, mix in asiago or a sharp cheddar cheese. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best results.
