  • 4 medium zucchinis, sliced into 1/4-inch thick rounds
  • 2 tablespoons olive oil for crispiness
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine zucchini rounds, olive oil, garlic, Italian seasoning, salt, and black pepper. Toss until everything is well-coated.
  3. Spread the zucchini evenly on a baking sheet lined with parchment paper.
  4. Sprinkle the Parmesan cheese over the top.
Cooking
  1. Roast in the oven for about 20-25 minutes until golden and crispy.
  2. Remove from the oven and garnish with fresh parsley before serving.

Notes

For a twist, mix in asiago or a sharp cheddar cheese. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven for best results.
