  • 4 large large russet potatoes Cut into wedges
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced Toasted if preferred
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste Fresh parsley, chopped For garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut each potato into wedges, keeping them uniform for even cooking.
  3. In a large bowl, combine olive oil, minced garlic, Parmesan, salt, black pepper, paprika, and oregano.
  4. Toss the potato wedges in the mixture until they are fully coated.
  5. Spread the wedges out on a baking sheet lined with parchment paper, avoiding overcrowding.
Baking
  1. Bake for 30-35 minutes, flipping halfway through, until they’re golden and crisp.
  2. Once out of the oven, garnish with chopped parsley and serve hot.

Notes

For added flavor, serve with a dipping sauce, such as ranch or sriracha mayo. Leftovers store well in the fridge for up to 3 days, or freeze for up to 2 months. Reheat in the oven for best results.
