Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the almond flour, cocoa powder, coconut sugar, baking soda, and salt.
- In another bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dairy-free chocolate chips, if using.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are set and the tops are crinkled.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Allowing the cookies to cool helps achieve that fudgy texture. You can experiment with different sweeteners and add nuts for extra crunch.
