  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Optional
  • 1/2 cup dairy-free chocolate chips optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the almond flour, cocoa powder, coconut sugar, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dairy-free chocolate chips, if using.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are set and the tops are crinkled.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Allowing the cookies to cool helps achieve that fudgy texture. You can experiment with different sweeteners and add nuts for extra crunch.
