  • 3 ripe bananas (mashed) The browner, the better for sweetness.
  • 1/3 cup melted butter Can be replaced with coconut oil for a vegan option.
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can be substituted with honey or maple syrup.
  • 1 large egg (beaten) For a vegan option, use flaxseed meal.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, and mix well.
  6. Stir in the flour until just combined. You can add nuts or chocolate chips if desired.
  7. Pour the batter into the loaf pan and smooth the top.
Baking
  1. Bake for about 60-65 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Let it cool for a few minutes in the pan before transferring it to a wire rack.

Notes

Serve warm with butter or honey. Store tightly wrapped at room temperature for 3-4 days, or freeze for up to 3 months.
