Ingredients
  

For the burger patties
  • 1 can black beans, drained and rinsed
  • 0.5 cup breadcrumbs
  • 0.5 cup corn
  • 0.25 cup red onion, finely chopped
  • 0.25 cup bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking
  • Burger buns
  • Toppings: lettuce, tomato, avocado, etc.

Method
 

Preparation
  1. In a large bowl, mash the black beans with a fork until mostly smooth.
  2. Stir in breadcrumbs, corn, red onion, bell pepper, garlic, cumin, chili powder, salt, and pepper until well combined.
  3. Form the mixture into burger patties.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Cook the patties for about 5 minutes on each side until golden brown.
  3. Serve on buns with your desired toppings.

Notes

For added heat, consider adding diced jalapeƱos or cayenne pepper. You can also swap black beans for chickpeas for a different flavor. If you're out of breadcrumbs, crushed tortilla chips work as a substitute. For freezing, lay the patties out in a single layer to prevent sticking.
