Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
- In another bowl, mix together coconut oil (or applesauce), maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until fully combined.
- If desired, fold in chocolate chips, nuts, or dried fruits.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to a week at room temperature, or freeze for up to 3 months. Reheat for a few seconds in the microwave for that freshly baked goodness.
