  • 1 cup rolled oats
  • 1 cup flour (whole wheat or gluten-free) Use gluten-free flour for a gluten-free option.
  • 1/2 cup brown sugar Can substitute with coconut sugar for a healthier option.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup coconut oil or applesauce Coconut oil for a richer taste, applesauce for lower fat.
  • 1/4 cup maple syrup or agave nectar Use maple syrup for a natural sweetener.
  • 1 teaspoon vanilla extract
Optional Add-ins
  • to taste chocolate chips, nuts, or dried fruits Customize the cookies with your favorite mix-ins.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, flour, brown sugar, baking soda, and salt.
  3. In another bowl, mix together coconut oil (or applesauce), maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until fully combined.
  5. If desired, fold in chocolate chips, nuts, or dried fruits.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container for up to a week at room temperature, or freeze for up to 3 months. Reheat for a few seconds in the microwave for that freshly baked goodness.
