  • 3 pieces ripe bananas, mashed The riper, the better for sweetness!
  • 1/3 cup melted coconut oil Can substitute with vegetable oil or melted vegan butter.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup gluten-free flour Can replace with a 1:1 baking blend or a mix of almond and tapioca flour.
  • 1/2 teaspoon cinnamon Optional ingredient.
  • 1/2 cup walnuts or chocolate chips Optional add-ins.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the mashed bananas with the melted coconut oil.
  3. Mix in the sugar, vanilla extract, baking soda, and salt.
  4. Stir in the gluten-free flour until just combined.
  5. If desired, fold in walnuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Let it cool for a few minutes before slicing.

Notes

Enjoy warm with peanut butter or almond butter, and feel free to add sliced strawberries or maple syrup for extra flavor.
