  • 4 oz bacon or pancetta (diced)
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Cooking Instructions
  1. Cook tortellini according to package instructions; drain and set aside.
  2. In a large skillet, cook the diced bacon or pancetta over medium heat until crispy.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. In a separate bowl, whisk together eggs, Parmesan cheese, and heavy cream.
  5. Remove skillet from heat and quickly stir in the egg mixture, allowing it to thicken slightly.
  6. Add the cooked tortellini and stir to combine, ensuring the pasta is well coated.
  7. Season with salt and pepper to taste.
  8. Serve immediately with fresh parsley and extra Parmesan if desired.

Notes

For best results, don't skip toasting the garlic. This dish keeps well in the fridge for about 3 days. Reheat gently on the stove with a splash of cream.
