  • 1/2 cup teriyaki sauce Ensure it is gluten-free if needed.
  • 1 cup mixed fresh vegetables (e.g., bell peppers, carrots, cucumbers) Feel free to switch out vegetables based on seasonality.
  • 4 large tortillas or wraps Use gluten-free tortillas if necessary.
  • to taste lettuce leaves (optional) Provides added crunch.
  • to taste sesame seeds (for garnish, optional) Adds crunch and elegance.

Preparation
  1. In a large bowl, combine the shredded chicken and teriyaki sauce, mixing well to coat.
  2. Lay out the tortillas or wraps on a clean surface.
  3. Place lettuce leaves (if using) on each tortilla, followed by a portion of the teriyaki chicken mixture and the mixed fresh vegetables.
  4. Roll the wraps tightly, tucking in the sides as you go.
  5. Slice each wrap in half and serve with additional teriyaki sauce for dipping if desired.
  6. Garnish with sesame seeds if desired.

Notes

These wraps are best enjoyed fresh. If you want to make them ahead of time, keep the tortillas separate from the filling until you’re ready to eat. Leftovers can be wrapped tight in plastic and stored in the fridge for about 3-4 days. For reheating, use the microwave for a few seconds, but avoid getting soggy.
