Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken thighs or breasts Thighs are juicier, but breasts work too
  • 1/4 cup honey Approximately 85 g
  • 3 cloves garlic, minced Adds flavor depth
  • 2 tbsp hot sauce Cayenne-based or preferred variety
  • 2 tbsp soy sauce Can use gluten-free if necessary
  • 2 tbsp butter Or olive oil for dairy-free
  • 1 tbsp fresh lemon juice Adds acidity and freshness
  • to taste Salt and pepper For seasoning
Sandwich Assembly
  • 4 pieces sandwich buns Brioche, potato, or your preferred type
  • to taste Optional toppings (crisp lettuce, sliced pickles, shredded cabbage) Customize to your liking

Method
 

Preparation
  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat a skillet over medium-high heat and melt 1 tbsp of butter.
Cooking
  1. Add the chicken pieces and cook for about 4-5 minutes per side until golden brown and cooked through.
  2. In a small bowl, whisk together honey, minced garlic, hot sauce, soy sauce, lemon juice, and the remaining butter until glossy and slightly thickened.
  3. Lower heat to medium-low, add the sauce to the skillet with the chicken, and toss to coat evenly. Add a splash of water or chicken broth if the sauce is too thick.
Assembly
  1. Toast the buns in a separate pan or toaster until lightly golden.
  2. Assemble the sandwich by piling saucy chicken onto the bottom bun, adding optional toppings, and crowning with the top bun.

Notes

Leftovers can be stored in the fridge for about 3 days or frozen for up to 3 months. Warm the chicken before assembling for best results.
