  • 2 pounds pork shoulder, cut into chunks
  • 1 pound tomatillos, husked and quartered
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2-3 pieces jalapeƱo peppers, chopped Adjust for spice preference
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • Fresh cilantro for garnish (optional)

Method
 

Cooking
  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the pork chunks and sear until browned on all sides.
  3. Remove the pork and set aside.
  4. In the same pot, add the chopped onion and cook until softened.
  5. Stir in the minced garlic, tomatillos, jalapeƱos, cumin, oregano, salt, and pepper. Cook for about 5 minutes.
  6. Return the pork to the pot, add chicken broth, and bring to a simmer.
  7. Reduce heat to low, cover, and let it cook for 1.5 to 2 hours, or until the pork is tender.
  8. Serve hot, garnished with fresh cilantro if desired.

Notes

This dish stores well in the fridge for up to 4-5 days and can be frozen for up to 3 months. Reheat before serving. For variations, swap pork for chicken or tofu or add chipotle for a smoky flavor.
