Ingredients
  

For the Shrimp
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil For marinating the shrimp
  • Salt and pepper to taste Season liberally
For the Salsa
  • 2 avocados, diced
  • 1 cup corn (fresh or canned)
  • 1/2 unit red onion, diced
  • 1 lime, juiced Ties everything together beautifully
For Garnish
  • Fresh cilantro Optional, for garnish

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the shrimp with olive oil, salt, and pepper.
Cooking
  1. Grill the shrimp for about 2-3 minutes on each side until pink and cooked through.
  2. In another bowl, mix the diced avocados, corn, red onion, lime juice, salt, and pepper to make the salsa.
Assembly
  1. Assemble the bowl by placing grilled shrimp on a bed of the salsa.
  2. Garnish with fresh cilantro if desired and serve immediately.

Notes

Store leftovers in the fridge for up to 2 days. Keep salsa and shrimp separate to maintain freshness. Reheat shrimp before serving.
