Ingredients
  

Soup Base
  • 2 cups chicken broth
  • 1 cup water
  • 1 cup diced vegetables (carrots, celery, and onion) Feel free to swap in your favorite veggies.
Dumplings
  • 1 cup dumplings (store-bought or homemade) Homemade dumplings are great, but store-bought work just fine.
Seasoning
  • to taste salt
  • to taste pepper
Garnish
  • to taste fresh herbs (parsley or green onions) Optional but recommended for added flavor.

Preparation
  1. In a large pot, combine chicken broth and water, bringing it to a boil.
  2. Add the diced vegetables and cook until tender, about 5-7 minutes.
  3. Carefully add the dumplings to the pot.
  4. Reduce the heat and let the soup simmer until the dumplings are cooked through, about 10 minutes for homemade dumplings or according to package instructions.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs.

Notes

Got leftovers? Store them in an airtight container for 3-4 days in the fridge, or freeze for up to 3 months. Reheat on low heat, adding water or broth if it gets too thick.
