  • 4 pieces chicken breasts Can substitute with chicken thighs
  • 1 cup dill pickle juice For marinating
  • 1 cup grated parmesan cheese For the crispy coating
  • 1 cup breadcrumbs Can substitute with crushed cornflakes for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste

Method
 

Preparation
  1. Marinate the chicken in dill pickle juice for at least 2 hours.
  2. Preheat oven to 400°F (200°C).
  3. In a bowl, mix parmesan, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  4. Remove chicken from marinade and coat each piece in the breadcrumb mixture.
  5. Place the coated chicken on a baking sheet.
  6. Bake for 25-30 minutes or until chicken is cooked through.
  7. Let rest for 5 minutes before serving.

Notes

Serve with a side salad or fluffy rice. Leftovers keep well for up to 3 days in the fridge. Can freeze for up to a month.
