Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cups unsalted butter, chilled and diced Use very cold butter for best results.
  • 0.25 cups sugar
  • 1 large egg yolk
  • 2-3 tablespoons cold water Add as needed to form a dough.
For the custard
  • 2 cups milk
  • 0.5 cups sugar
  • 0.25 cups cornstarch Can substitute with arrowroot powder or all-purpose flour.
  • 4 large egg yolks
  • 1 tablespoon vanilla extract
Toppings
  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, mango) Use any seasonal fruits.

Method
 

Crust Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Stir in the egg yolk and enough cold water to form a dough.
  5. Press this into a tart pan and bake for 15-20 minutes until golden.
  6. Let the crust cool.
Custard Preparation
  1. In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks.
  2. Cook over medium heat, stirring constantly until thickened.
  3. Remove from heat and stir in vanilla.
  4. Pour the custard into the cooled tart shell.
Tart Assembly
  1. Arrange the fresh fruits on top of the custard.
  2. Chill the tart for at least 1 hour before serving.

Notes

Serve chilled for a refreshing kick. Drizzle with honey before serving for added shine and flavor.
