  • 2 pieces eggs use room temperature for fluffiness
  • 1 teaspoon grated fresh ginger

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, cream together the butter and honey until smooth.
  3. Beat in the eggs, grated ginger, and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the chopped dates and diced pears.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let it cool before serving. Enjoy with a cup of tea!

Notes

Store at room temperature for about 3 days; in the refrigerator for up to a week; or freeze slices for up to 3 months. Reheat in the microwave for about 15 seconds if desired.
