Ingredients

Main Ingredients
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 cups fresh broccoli florets
For the Sauce
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup beef broth
  • 3 tablespoons brown sugar
  • 2 tablespoons oyster sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes
For Thickening
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
For Serving
  • Cooked white or brown rice For serving
  • Sesame seeds and sliced green onions For garnish

Method

Preparation
  1. Place the cubed beef chuck roast into the bottom of a 6-quart crockpot in an even layer.
  2. In a medium bowl, whisk together soy sauce, beef broth, brown sugar, oyster sauce, Worcestershire sauce, sesame oil, minced garlic, grated ginger, smoked paprika, and red pepper flakes until well combined.
  3. Pour the sauce mixture evenly over the beef in the crockpot, ensuring all pieces are coated.
Cooking
  1. Cover and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours, until the beef is very tender and cooked through.
  2. About 30 minutes before serving, whisk together the cornstarch and cold water to create a slurry. Stir the slurry into the crockpot to thicken the sauce.
  3. Add the broccoli florets on top of the beef, replace the lid, and cook on HIGH for an additional 20 to 30 minutes until the broccoli is bright green and tender-crisp.
  4. Gently stir everything together to coat the broccoli in the thickened sauce.
Serving
  1. Serve hot over cooked rice and garnish with sesame seeds and sliced green onions.

Notes

For variations, consider using chicken thighs or tofu for a healthier option, adding colorful bell peppers or snap peas for extra crunch, and adjusting the spice level with more crushed red pepper flakes or sriracha.
