Ingredients
  

Main Ingredients
  • 1 pound chicken breasts
  • 2 cups broccoli florets Can use frozen broccoli.
  • 1 cup shredded cheddar cheese
  • 1 cup rice (uncooked) Can substitute with quinoa or cauliflower rice.
  • 2 cups chicken broth
  • 1 cup cream of chicken soup Can use dairy-free version for a dairy-free option.
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the uncooked rice and broccoli florets on top of the chicken.
  3. In a bowl, mix the chicken broth and cream of chicken soup together, then pour over the ingredients in the crockpot.
  4. Season with salt and pepper to taste.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Finishing Touch
  1. In the last 30 minutes of cooking, stir in the shredded cheddar cheese until melted and combined.
  2. Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat with a splash of broth for best results.
