Preparation
- Place the chopped vegetables in the bottom of the slow cooker.
- Season the chuck roast with salt and pepper, then place it on top of the vegetables.
- In a small bowl, mix the beef broth, Worcestershire sauce, and minced garlic. Pour this mixture over the roast.
Cooking
- Cover and cook on low for 8-10 hours, or until the meat is tender and falls apart easily.
Serving
- Once done, remove the roast and vegetables, shred the meat with two forks, and serve with the cooking liquid.
- Garnish with fresh herbs if desired.
Notes
Leftovers can be stored in the fridge for up to 3-4 days or frozen for about 3 months. Reheat with a splash of broth for moisture. Consider adding wine for enhanced flavor or other veggies for variation. A BBQ twist can be achieved by using sauce instead of broth.
