Ingredients
  

Main Ingredients
  • 1 lb dried red beans Rinse and soak overnight
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 lb smoked sausage, sliced Turkey sausage can be used for a lighter option
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning Adjust to taste
  • 1 teaspoon dried thyme
  • 2 bay leaves Remove before serving
  • Salt and pepper to taste
  • 4 cups cooked rice
  • Green onions, chopped (for garnish)

Method
 

Preparation
  1. Rinse and soak the red beans overnight. Drain and set aside.
  2. In a Crock-Pot, combine the beans, onion, bell pepper, celery, garlic, smoked sausage, chicken broth, Cajun seasoning, thyme, and bay leaves.
Cooking
  1. Stir well, cover, and cook on low for 8-10 hours or until the beans are tender.
  2. Remove bay leaves and season with salt and pepper to taste.
Serving
  1. Serve over cooked rice and garnish with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days or frozen. Reheat with a splash of broth for best texture.
