Ingredients
  

Vegetable Mixture
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup chopped bell peppers
  • 1/2 cup chopped onions
Dry Ingredients
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Binding Ingredients
  • 2 pieces eggs
  • Oil for frying

Method
 

Preparation
  1. In a large bowl, mix together the grated zucchini, grated carrots, chopped bell peppers, and chopped onions.
  2. In another bowl, whisk together the flour, cornmeal, baking powder, salt, and pepper.
  3. Combine the dry ingredients with the vegetable mixture.
  4. Beat the eggs and add them to the bowl, mixing until everything is nicely combined.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  3. Fry until golden brown on both sides, about 3-4 minutes each.
  4. Remove from the pan and drain on paper towels.

Notes

Grate your veggies finely for more crispy goodness. For a gluten-free option, use almond or coconut flour. Add minced garlic or your favorite spices for extra flavor.
