  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or olive oil) Duck fat is recommended for crispiness.
  • 1 whole head garlic Cut-side down for roasting.
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt for finishing

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C) with a large roasting pan inside.
  2. Rinse the potatoes under cold water, then boil them in a stock pot filled with cold water, kosher salt, and baking soda for about 25 minutes until fork-tender.
  3. Drain the potatoes and let them dry.
  4. Add duck fat to the preheated pan and let it melt.
  5. Rough up the potato edges in a colander, then transfer them into the pan and season with salt and pepper.
Cooking
  1. Nestle the garlic head cut-side down in the pan and roast for about 55–60 minutes, tossing every 20 minutes, until golden brown.
  2. Remove the garlic, mash the cloves together with rosemary and olive oil, mix back into the potatoes, and roast for an additional 5 minutes.

Notes

For best results, cut potatoes uniformly and season generously. Consider experimenting with different herbs like thyme or oregano.
