  • 2 tablespoons grated parmesan (optional) for a cheesy version

Preparation
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash and thoroughly pat dry the cauliflower. Cut into bite-sized florets for even roasting.
Seasoning
  1. In a large bowl, toss the florets with olive oil, salt, pepper, garlic powder, smoked paprika, and red pepper flakes. If using parmesan, add it now.
Roasting
  1. Spread the cauliflower evenly in a single layer, ensuring no overcrowding.
  2. Bake for 25–30 minutes, flipping halfway through, until crispy and golden brown.
Serving
  1. Serve immediately as a side dish, snack, or salad topping. Pair with dips like ranch, garlic aioli, or spicy sriracha mayo.

Notes

Ensure your cauliflower florets are dry before seasoning to help them crisp up in the oven. Don’t overcrowd the baking sheet, as this can cause the cauliflower to steam instead of roast. Feel free to experiment with different spices and seasonings to find your perfect combination. For a cheesy twist, add freshly grated parmesan cheese before roasting. You can also try different spices such as curry powder or Italian seasoning to switch it up.
