  • 2 1/2 pounds potatoes (about 8-10 medium-size) Use higher-starch potatoes like Russet or Idaho for best results.
  • 4 Tablespoons olive oil (for drizzling) Drizzle generously over wedges.
Spice mixture
  • 1 1/2 teaspoons sweet or smoked paprika
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 450°F.
  2. Wash the potatoes well, then slice them into wedges.
  3. In a small bowl, combine all the spices.
  4. For extra crispy potato wedges, soak the cut potatoes in a large bowl of very cold water for 30 minutes to remove excess starch. Drain and pat them dry afterward. This step is optional.
  5. Drizzle the potato wedges generously with olive oil and toss to coat.
  6. Sprinkle the spice mixture over them and toss again until everything is evenly distributed.
  7. Spread the potatoes out on a large baking sheet in a single layer.
Baking
  1. Bake for 40-45 minutes, or until they are fork-tender with browned, crispy exteriors.
  2. Remove from the oven and serve immediately.

Notes

Pair with ketchup or ranch dip. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 2 months. Reheat in the oven for best results.
