Preparation
- Wash and scrub the potatoes. Peel if desired, then cut into 1-1.5 inch wedges or 1-inch chunks.
- Soak the cut potatoes in cold water for 30-60 minutes to draw out excess starch. Drain and thoroughly pat them dry.
- Preheat your oven to 400°F (200°C) with an oven rack in the middle position.
- In a very large bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper.
- Add the thoroughly dried potato pieces and toss vigorously to ensure they are evenly coated.
Roasting
- Spread the marinated potatoes in a single layer on a baking sheet or roasting pan. Avoid overcrowding.
- Roast for 20-25 minutes without disturbing.
- Carefully remove the pan and flip the potatoes, pouring broth around them.
- Return the pan to the oven and roast for another 25-35 minutes, flipping every 10-15 minutes.
- For extra crispiness, ramp up the oven to 425°F (220°C) for the last 10-15 minutes or broil for 1-3 minutes.
Serving
- Let the potatoes rest in the pan for 5-10 minutes, uncovered.
- Garnish with fresh chopped parsley or oregano just before serving.
Notes
Store leftovers in an airtight container for 3-5 days. Reheat in the oven at 375°F (190°C) to regain crispiness. For variations, add Parmesan cheese or smoked paprika for different flavors.
