Ingredients

Main ingredients
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced Fresh garlic is key for the best flavor.
  • 1/3 cup grated Parmesan cheese Can substitute with pecorino Romano or vegan Parmesan for variations.
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • zest of 1 lemon optional lemon zest Toss in for added zestiness.

Method

Preparation
  1. Rinse 1 pound of fresh green beans and trim the ends. Pat them dry thoroughly with a clean towel.
  2. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat until shimmering but not smoking.
Cooking
  1. Add the green beans to the skillet in a single layer if possible. Cook for 8-10 minutes, stirring occasionally, until golden brown spots appear and the beans begin to crisp.
  2. During the last 2 minutes of cooking, add the minced garlic. Stir constantly to coat the beans and toast the garlic gently without burning.
  3. Season the beans with salt and freshly ground black pepper to taste. If you’re feeling zesty, toss in lemon zest and mix well.
  4. Remove the skillet from heat and immediately sprinkle the grated Parmesan cheese over the beans. Toss gently to coat the beans as the cheese melts slightly.
  5. For the crispiest texture, serve warm immediately!

Notes

Don’t overcrowd the pan for better crisping! Cook in batches if necessary. Try smoked paprika for a different flavor.
