  • 1 can black beans, drained and rinsed
  • 1 cup pepper jack cheese, shredded
  • 8 pieces corn tortillas
Spices and Seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
For Baking
  • Olive oil spray or extra virgin olive oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the black beans, cumin, chili powder, salt, and pepper until well combined.
  3. Place a tortilla on a flat surface; add a scoop of the black bean mixture and a handful of cheese.
  4. Fold the tortilla in half to create a taco shape.
  5. Repeat with the remaining tortillas.
Baking
  1. Place the tacos on a greased baking sheet.
  2. Spray the tops lightly with olive oil.
  3. Bake for 15-20 minutes or until crispy and golden-brown.
Serving
  1. Serve warm, optionally with salsa or guacamole.

Notes

For extra crunch, consider frying the tortillas instead of baking them. You can customize the spices to your liking. Add more chili powder for extra heat or try different types of cheese. Serve with a side of rice or salad to make a complete meal. Leftovers can be stored in an airtight container in the fridge for 2-3 days; reheat in the oven at 350°F (175°C) until warm and crispy.
