Preparation
  1. Cook the gnocchi according to package instructions. Drain and set aside.
Cooking
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add fresh spinach to the skillet and cook until wilted.
  3. Pour in the heavy cream and stir to combine, bringing it to a simmer.
  4. Stir in the crumbled feta cheese and season with salt and pepper.
  5. Add the cooked gnocchi to the skillet and toss to coat well with the creamy sauce.
Serving
  1. Serve warm, topped with grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove or in the microwave. The sauce may thicken after storing, add a splash of milk or cream when reheating to restore creaminess. For lighter version, use half-and-half instead of heavy cream. Add other vegetables like cherry tomatoes or mushrooms for additional flavor.
