  • 1 lb ground beef Use lean beef for less fat
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cups beef broth Substitute with vegetable broth for a lighter option
  • 1 cup elbow macaroni Cook according to package instructions
  • 1 cup shredded cheddar cheese Feel free to mix in other cheese varieties
  • 1 cup milk Add more if soup thickens when reheating
  • to taste salt and pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the diced onion, carrots, and celery to the pot. Cook until the veggies are tender.
Cooking
  1. Stir in the beef broth and bring it to a boil.
  2. Toss in the elbow macaroni and cook according to package instructions until al dente.
  3. Reduce heat and stir in the milk and cheddar cheese until fully melted and creamy.
  4. Season with salt, pepper, garlic powder, and onion powder.
  5. Serve warm and dig in!

Notes

For added nutrition, consider mixing in some spinach or kale. If you want to switch it up, try making it vegan by substituting the beef with lentils or a plant-based meat substitute.
