  • 1 cup cranberry sauce Use homemade or store-bought
  • 8 ounces brie cheese Cut into slices

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large, oven-safe skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper, then sear them in the skillet until browned on both sides, about 4-5 minutes per side.
Cooking
  1. Once browned, pour the cranberry sauce over the chicken, then top each piece with slices of brie cheese.
  2. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  3. Remove from the oven and let sit for a few minutes. Garnish with fresh herbs if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days or frozen for 2-3 months. Reheat in the oven or microwave until warmed through. For variations, try goat cheese or add walnuts for crunch.
