- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Toss in the chicken breast, diced tomatoes, chicken broth, orzo, and oregano.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the chicken is cooked through and orzo is tender.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Use rotisserie chicken for an even quicker version. Add a splash of heavy cream for creaminess. For a kick, add red pepper flakes. Leftovers can last 3-4 days in the fridge or up to 3 months in the freezer.
