Preparation
- Place all the ingredients in a food processor or blender.
- Blend until the mixture turns into a dough. It should be moldable but still slightly sticky.
- If the dough is too crumbly, add more coconut butter. If it is too sticky, add a bit more coconut flakes.
- Once the dough has the right consistency, shape it into about 10 balls.
- Roll the balls in extra coconut flakes if desired.
- Refrigerate for at least 30 minutes to let them firm up.
Notes
Store your Coconut Energy Balls in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Thaw before enjoying. You can customize by adding cacao powder for a chocolatey flavor or dried fruits for sweetness.
