Main Ingredients
  • 50 g coconut flakes
  • 60 g almonds Use raw almonds for a healthy crunch.
  • 100 g coconut butter
  • 2 tablespoons coconut oil (liquid)
  • 50 g rice syrup
Optional Rolling
  • 30 g coconut flakes For rolling the balls, optional.

Method
 

Preparation
  1. Place all the ingredients in a food processor or blender.
  2. Blend until the mixture turns into a dough. It should be moldable but still slightly sticky.
  3. If the dough is too crumbly, add more coconut butter. If it is too sticky, add a bit more coconut flakes.
  4. Once the dough has the right consistency, shape it into about 10 balls.
  5. Roll the balls in extra coconut flakes if desired.
  6. Refrigerate for at least 30 minutes to let them firm up.

Notes

Store your Coconut Energy Balls in an airtight container in the refrigerator for up to a week, or freeze for up to three months. Thaw before enjoying. You can customize by adding cacao powder for a chocolatey flavor or dried fruits for sweetness.
