Mousse Topping Ingredients
  • 1 cup heavy cream For whipping
  • 8 ounces semi-sweet chocolate, chopped
  • 2 tablespoons powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, melt the butter and sugar together. Allow it to cool slightly, then whisk in the eggs and vanilla.
  3. Stir in the flour, cocoa powder, and salt until just combined.
  4. Pour the brownie mixture into the prepared baking pan and bake for 20-25 minutes.
Mousse Preparation
  1. Heat the heavy cream in a saucepan until almost boiling.
  2. Pour the hot cream over the chopped chocolate and let it sit for a few minutes before stirring until smooth.
  3. Allow the chocolate mixture to cool slightly, then fold in powdered sugar and whipped cream until combined.
Assembly
  1. Once the brownies have cooled, spread the mousse on top.
  2. Chill in the refrigerator for at least 2 hours before serving.

Notes

For serving, consider topping with vanilla ice cream, chocolate shavings, or fresh berries. These brownies store well in the fridge for about a week or can be frozen for up to three months.
